A brownie is the best of two worlds. Rich and flavorful like a cookie, but at the same time light and spongy like cake.
Ingredients
- 1 stick of melted butter
- 1 cup of granulated white sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1/3 cup of unsweetened cocoa powder
- 1/2 cup all-purpose flower
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1 pint strawberries
- fresh mint
Directions
Preheat oven to 350C. Lightly beat eggs and vanilla extract in a bowl. Mix in dry ingredients and stir until the batter is well mixed. Stir in the butter. At this point the batter should be shiny and smooth.
As it cools the butter is going to set a bit and its going to thicken, but that’s ok. Butter a 9×9 pan. Spoon the batter into the pan and spread it into an even layer.
Place the pan in the oven and bake for 25 minutes. The brownies will be done when you can stick a toothpick into the center and it can be withdrawn completely clean. Remove the brownies from the oven and let them cool.
Slice into squares and serve with fresh strawberries and mint to garnish.
